I was looking around in the network settings and there is an option to create an adhoc network. I don't have another 360 to test it out though.

I'm pretty sure you can't, but I could be wrong. It would definitely be sweet if you were able to.

Not sure about a whole "party" but I know games like L4D allows two 360s to wirelessly connect to each other outside of Live.

Yes. You can wirelessly connect them all to the same wireless router OR do an ad-hoc network without any other networking hardware (360 Slim only). I've never actually done the ad-hoc thing, but I've read about it on Xbox.com, and yes, it's possible.
