We don't call Metal Gear Rising: Revengeance a Devilofwargaidenetta.

Because Symphony of the Night was, at the time, a clear departure from the series' established gameplay. It was heavily inspired (read, ripped off almost wholesale) by the Metroid games, specifically Super Metroid. So Metroidvania came to be used to describe the Castelvania games that followed SOTN's design philosophy, rather than the linear action of Castelvania classic.

As for why it has come to describe the entire genre, which I suspect is the actual question at hand, I would guess that as the two most notable examples, it's an easy point of reference.

To address your second point, the term Devilofwargaidenetta is both too long and totally unnecessary. The genre of Metal Gear Rising: Revengeance belongs to already has a name.

Yeah, but why does Metroid get its full name in there while Castlevania only gets the vania part? Shouldn't it be more like MetroVania? Or CastleRoid?

Not all Castlevanias are a Metroid, but all Metroids are a Metroid.
