Has there ever been a final boss that's really difficult to beat?
Wonder Boy in Monster World had a pretty difficult last boss (unless you use save states, obviously).
It's incredibly annoying, you're on a big conveyor belt that drags you backwards and has a saw going left and right across it, while lasers come down at you from above. The conveyor belt makes the fight a real pain. The best way to go about it is to collect all of the hearts (HP) in the game, have an elixir (to restore all your life if you lose it all) and a healing item and all the lightning magic you can get to take out the lasers and then just rush it and not bother defiending yourself much. I'm not sure but I wouldn't be surprised if the guy in that video was pausing it at times to use save states and then edit out the failed attempts.
I hate that boss, it's a dick.
Nowadays final bosses seems to be pretty easy, and a lot of times when you expect a memorable final showdown it's a forgettable letdown.
If you play some older games, you'll run into some bosses that are impossible. I'd rather have a boss that's too easy, than one that makes you fling the controller and stop playing the game altogether.
Off the top of my head, the "true" boss at the end of Demon's Crest, and almost every SNK fighting game had a frustrating final battle.

In Kingdom Hearts 3DS, the Young Xeanhort fight is a pretty difficult. Mainly because the fight lasts forever and because if you don't have the defense, one or two hits will force you to break away from the fight and heal, prolonging the fight longer.
The boss in Blue Dragon isn't that bad. I didn't expect the final fight and was not ready but still killed him with only having jiro go down. But I did have Resurrection and the renew necklace on jiro.
I found the Archdemon from Dragon Age: Origins to actually be pretty difficult, and I was only playing on Normal. Especially if you made the mistake of not bringing a long distance fighter (ie image, archer). Can't imagine on harder difficulties.
The only two I can think of is Deadpool from Wolverine Origins, just because he was cheap, and Kessler from Infamous. Once you learned his pattern he was easier. On hard they are both time consuming.

Like someone else said, the final boss in Legend of Dragoon was actually really easy, but he takes nearly an hour to defeat just because of how much frickin HP he has.
Sephiroth was pretty hard to beat, too, if you don't know what setups to use, or are too impatient to get Knights of the Round.
I forget his name, but in FF IX, that boss is just cheap. I'm sure there's a way to prevent it, but insta-death every few turns with a pretty high chance of it being the entire party? I beat him because I happened to be lucky enough for him to not kill my entire party with one attack... twice.
Ex-Death from FF V is pretty hard if you don't have the right abilities.
Carnage from Spider-man & Venom: Maximum Carnage on the SNES and Genesis. I've had that game for a good 15 years or more, and to this day, I can't beat that guy.
I always had a lot of trouble with Eyedol in Killer Instinct, and Kintaro and Shao Kahn from Mortal Kombat II.
Shadow Link from Zelda II? Try to, first of all, get anywhere in that game, and if you do manage to get to him, try to beat him without using the crouch-in-the-corner trick.
Final boss in Jak II is pretty hard.

The hardest story boss (Assuming you don't abuse Trio of 9999) is probably going to be Braska's Final Aeon in Final Fantasy X. He does insane amounts of damage, has loads of HP, and heals with the help of his two stone column buddies, who respawn with more HP if you kill them. I literally couldn't beat him the first time I reached him, and had to go get the Magus Sisters. He's easily defeated if you know what to do, but for the average 8 year old, he's going to be a pain.
The only problem with this is Braska's Final Aeon was not the final boss. I know he was more difficult but that's the TC's point. Yu Yevon was the final boss....
