From all the recommendations in everyone's posts, I'd say you should at least rent Uncharted: Drake's Fortune, and try to purchase Uncharted 2: Among Thieves. If you like them both play Uncharted 3 as well, your mileage may vary on whether it's better or worse than Uncharted 2, but it's a great game.
JRPG-wise, there's Final Fantasy XIII and XIII-2, which has evolved the combat of the series, and has amazing story, graphics and music. There's also Valkyria Chronicles, which is a beautiful strategy game with RPG and a bit of TPS elements.
If you're a fighting game enthusiast, you owe it to yourself to check out the Blazblue series, a deep, balanced, fast paced 2d fighter with the best story I've ever seen in the genre, with fantastic music to boot. --- Jagus: Seriously? Woah theres a Way of the Samurai 4?!!! Also how is that Bleach game? Gonna pick that game up too.
Way of the Samurai 4 is only on PSN unless you import it, but it's pretty awesome if you like the type of game. Siren: Blood Curse is another game you can only get on PSN unless you import it. It's a horror game, and there's a demo on PSN if you're into that.
Uncharted, God of War, Killzone and Resistance all have those convenient bundle packs so those are an excellent choice. Though, beware the first Killzone is the original, and not that great. For Ratchet, just get Tools of Destruction and Crack in Time. All 4 One isn't bad, but it's a co-op game and not a traditional Ratchet title.
I enjoyed Bleach despite my knowledge of the series being limited to what I learned through my sister. It's a pretty mindless beat 'em up, so as long as that doesn't scare you off you should be good. --- Don Ho will not emerge from the valley of darkness.
