Mine are

PS1 Chrono Cross (tons of games on this system but this is my all time fav)
PS2 GTA SA (I still believe that this is the best GTA game to date)
PS3 Deus Ex Human Revolution (subject to change due to FF versus 13)

PS2 - I Missed most of the games of this era, played very few, but for me, it's Ring of Red
PS3 - again, only played a few so far....Dragon's Dogma
