That depends on the series and how it's done.
Tomb Raider needed it, DMC didn't.

I don't mind them. Depends if they're done right. MK 2011 has easily become the best MK title in the series. I like CD's Legend trilogy of Tomb Raider, but they wrote themselves into a corner by centering Lara's exploits around her mother. So as much I'd hate to see Keeley Hawes and Lara's friends go, a startover was necessary. I just hope they improve the story over what Legend introduced.

Another good example is Double Dragon Neon. Such a great homage to DD and the 80's in general. Badass soundtrack to boot.

Yeah, Mega Man X is actually a continuation of the original Mega Man continuity after some undisclosed (?100 Years?) amount of time has passed.

Depends on how it's handled. Like the new Mortal Kombat for instance. They did a great job rebooting that without actually "remaking" it.

Depends. I like the new Tomb Raider direction and think Mortal Kombat (2011) is the best reboot so far and the only one to do it right. But then there are bad ones. Lords of Shadow is a great game but it's barely Castlevania and the new DmC speaks for itself. What were they thinking?!
