2. They're pretty much even in terms of quality (I'd say Brotherhood and Revelations are a little better), but it's a trilogy so you might as well start at the beginning.

Why would anyone skip any?

2 is hands down the best.

Bro is still very good, although I always found it a little less tight compared to 2.

Revalations is a boring, buggy, forgettable, and at times feels like an absolute chore to play through. Youtube the ending and move on, absolutely nothing worthwhile happens in the game except for the last ten minutes.
