As soon as you put in a HD that the PS3 does not recognize as its own, it formats the HD.

Your best bet is to get the old PS3 working again (I'm assuming you are getting a new one because the old one does not work) and then start the complete file transfer from one system to the other. This will transfer *everything* including copy-protected saves. At that point, you can junk the old PS3 or do whatever to it.

Your othre option is to get the old PS3 working again, and use thumb drives to transfer saves and stuff, though copy-protected material cannot be moved this way, and I've got no idea if downloaded game can even be copied onto thumb drives (though you can just download again onto the new PS3).

Games can't be transferred to USB devices for rather obvious reasons.

Dammit. I should have backed up my saves onto the cloud storage when I had a chance.

Slap the HDD from the PS3 into a computer, take what you need, then let the PS3 format that HDD.

The file system won't be recognized.
