I enjoyed Ace Combat: Assault Horizon, though if you have PSP or Vita Id recommend Ace Combat X instead.

...Apache: Air Assault? It's a helicopter game as opposed to planes, but it's the best combat flight sim on the PS3. If you count helicopters.
