Would you recommend starting from Metal Gear Solid 1 or Metal Gear 1+2?

MGS1 has little plot summaries of both games. Even in 1998, Konami knew people wouldn't want to play games that old.

If you think you'll have the patience to put up with old games as MG and MG2, then give it a try. Otherwise it's not a problem if you just start with MGS1. It's always possible to read up on the stories on wikis, or in MGS1 (synopsis of both games in menu).

Metal Gear 2: Solid Snake is really brilliant in terms of story and gameplay. I know it's old and the mechanics might be outdated, but I really urge you to play it.

Metal Gear 1 doesn't have a lot story outside of one plot twist, but I still think the music and gameplay are great.

It depends. If you want to play the games for the story then start with MG1 and 2, but if you're likely to be put off by playing 20 year old games then don't miss out on a great saga by for that reason and star wit MGS1.

It's really interesting seeing the series evolve though. Especially if you start with MG1 and 2.

No no no no no...don't play these games in chronological order unless you want certain plot elements to be spoiled. Release order for sure for the Solid games, and I'd say that you'd probably be fine without Metal Gear 1 & 2.
