My favorite Resident Evil game is 2, but my favorite game from the series is 4.
See, debate regarding the gameplay aside, 4 really doesn't have much connection to the events of the rest of the series. With its gameplay, atmosphere, setting, excitement, customizing weapons, characters and memetic nature, it's still one of my favorite games of all time.
2 is more of a survival horror though, and represents what I expect from the series better. It too stars Leon, has the mechanic of affecting the second scenario through your first one, has quite a bit of atmosphere in my opinion, allows for some much earlier customization, had impressive graphics for its time, and as much as I love the mansion, I also like seeing Raccoon City and its police station. This is why its my favorite of the classic RE games.
REmake Still one of the best games ever made. Honorable mention to 2 which was amazing. 4 was a fantastic game but it was a total departure from the gameplay that had defined the series to that point. 4-6 are 2nd generation Resident Evil games. Not what I consider survival horror (tank controls, extremely limited inventory, stationary environments with blind corners).
I really wnat them to make another survival horror resident evil. Probabaly wouldn't appeal to current gen gamers though so I doubt it happens.
