which would be better for AoE and which for Damage to one target.

It's different for every profession. A warrior and a guardian and a mesmer using a sword all do very different things.

For Guardian, its sword for AoE, they can't use axes, and mace is a more defensive AoE (I guess...). Single target damage for Guardians is more 2h sword and hammer (even though the attacks will hit multiple targets).
