well, you know, you could also get Randuins and maybe Thornmail. Or Sunfire cape. Just saying.

When the tank has 250 armor and 3.5k health, it's gonna take time to kill them unless the enemy has a lot of AP

Remember, the reason we are in "Stack health" meta is that it is SO easy to shred through armor.

Disregarding the active ability and attack speed, to exceed damage gained by a fully stacked The Bloodthirster on a target, the target must have at least 1400 health. To deal more average damage to a target than a The Bloodthirster from full to no health, the target must have over 2800 health.

This is taken straight from the LoL wiki. Until you get past 2800 health, it is still doing less damage than a BT. Also, you should have armor as well, if you have 100 armor, that reduces the damage by 50%. Get a thornmail and lol as they kill themselves on you.

I'm not sure (don't think so though), but it gives you 100 armor, cutting that 5% per hit into effectively 2.5 per hit (almost the same as Liandrys), and gives damage back. Plus you are bound to build more armor items than just that, so you are reducing the damage even more.
