I need to pick up a tanky engager champ to be able to fill all of the roles, but a lot of them look pretty boring. Would Irelia be able to fill that role well?

Irelia can be built very tanky and do a lot of damage.

She's not ideal for an engage though. She's best as a follow-up.It's almost impossible for a carry to peel her but you really shouldn't be STARTING the fight as her.

I wouldn't tank with her play her like an assassin or a follow up/clean up bruiser [peeling off your AD is important too, often more than that]

They start a fight and do some cc you get right on that carry and make them regret it.

Irelia is better built as mostly a glass cannon in S3, if you want someone tanky go for Pantheon, J4, Jax or Xin Zhao.

Her innate Tenacity means you can be in the middle of everything and if you take too much damage you have no trouble just walking away from the fight. Which means, she doesn't have to be very tanky. She, in my opinion, is the very definition of an off-tank. Build items that aren't explicitly tanky but give good defensive traits anyway, like Frozen Mallet, Wit's End, Iceborn Gauntlet, Spirit Visage are all good items to have.
