I completed a world's castle with the propeller suit and Mario could've easily made his way on to an airship to save Princess Peach.

Why didn't he do it? Will this be explained at the end of the game? Don't spoil it for me, I've only completed worlds 1, 2 and 5.

Mario can't fly or float for an unlimited time. He must find a spot to land on.

Oh, and this would make the game too easy.

The airship flies away the moment Bowser Jr. jumps on board.

Well if you want to get technical, the size of the airship is also a 'plot hole' - because compare the size of the airship in those cutscenes to the size of the airship in the actual levels...

You know, there are no plot holes in Mario games. In order to have a plot hole, one must have a plot. :) Mario titles are very famous for essentially having no plot - the whole Bowser captures Peach Toadstool is just a front to drive the important stuff, which is the game play. Miyamoto said in SMG2 he didn't want to focus on story at all.

Mario titles have always been threadbare on plot - how may times can Bowser capture Peach, after all?

The same reason Justice League creators gave when asked why Flash didn't normally vibrate through walls, take everyone down in the blink of an eye and stuff like that: The show would be over.
