What's the best set-up for a defensive Altaria in UU?

Taken from Smogon:

Physical Tank

Altaria @ Leftovers/Rugged Helmet
252 HP/252 Def/4 SpDef Bold
Natural Cure/Cloud Nine

--Cotton Guard
--Roost
--Roar/Toxic/Haze/Heal Bell
--Dragon Pulse

Not much to say except boost Defense, recover with Roost, use the third slot for utility, then attack with Dragon Pulse

Isn't it a little redundant to run max Def and cotton guard? I know Altaria won't take any Ice hits well, but that doesn't seem a good reason to leave its SpDef at minimum. After one Cotton Guard, Altaria still has 542 Def, assuming 4 Def EVs and neutral nature (which can then be boosted again up to 1356), so wouldn't it be better to run max SpDef and min Def?

At the moment I'm thinking of using this slight variation on the set:

Altaria @ Leftovers
Calm - 252 HP/252 SpDef/4 Def
Natural Cure

--Cotton Guard
--Roost
--Roar
--Dragon Pulse

Same premise as above, but thinking of using this on a UU stall team along with Eviolite Chansey (hence the reason this isn't performing the cleric role) so this will be my phazer (although the more I look at Mandibuzz, the more she seems like she might be useful for this instead - should I opt for Haze or Toxic instead?). Cloud Nine seems kinda pointless in UU - with only Hail and Sun really being used, both of which are likely to become BL soon, Natural Cure seems like a far superior option.

Don't worry, I've no idea what the hell I'm supposed to be doing either.

Well if you already have a Chansey do you really need to max Sp Def on Altaria?

^You should invest 252 in HP to maximize overall bulk. There are very few times where investing in Def and SpDef before HP is a good thing, and all of those involve high HP Pokemon like Blissey and Wobbuffet.

EDIT: Also, Calm is a terrible idea when you're using a physical move.

Not really sure what that set is trying to acheive. As Metleon stated, your bulk is hindered my non-max HP, and you seem to be torn between attempting a bulky sweep and trying to wall things. Taking two turns to set up isn't often a good idea and it doesn't seem like you're doing much even when you are; with one weak offensive option you won't be getting anywhere if anything steel/bulky comes in, and if you're walling something there's not much else you can do back to cripple them.

Correction:

217 Def before boost.
542 Def after one boost.
868 Def after two boosts.

The boost is applied to the original stat (4*217), NOT the boosted stat (2.5*542=1355).
