You do have some Turians, like Joram Talid, who are actively anti-human. Or someone like Saren Arterius. Both still feel like outliers, and overall the Turians seem more stable than other races despite their emphasis on militarization. As someone already mentioned above, they have a German or British demeanor. I'd liken them to the Prussians of the 1700s or the British Empire during the 1800s. The focus is on stability instead of expansion. They're not have-not fantasists like the violent Krogan who nuked Tuchanka repeatedly. The Salarians and Asari seem preoccupied with other things, like nerd projects for the former and good living and spirituality for the latter.

geth = apple and samsung (both factions)
vorcha = south americans
batarians = eastern europeans
drell = either bohemian style hipsters, asian pop star types, etc
