Shouldn't they add color to the old Gameboy games?

What about adding the alternate color palettes like when you played monochrome GB games on a GBC?

That's a good idea. Maybe some people should suggest that to Nintendo. They're thinking of a lot of different things to keep the 3DS interesting right now. This maybe a perk for some. How about using the Graffiti feature on VC games? That could work.

Were the Super Game Boy and Game Boy Color's colour options disrespecting the legacy of the games? Even the games that had custom Super Game Boy palettes programmed in the first place?

The 3DS gives us the option to choose between black & white and the black & green-ish; there sgould also be an option to choose between Super Gameboy colors
