Samurai Chronicles if you like Grinding, Dead of Alive Dimensions, SSFIV, Ridge Racer is a good/decent game, same I hear with the Ghost Recon game.

DOA and SSFIV. Which can be too niche I guess, but I don't mind since traditional fighters is the only thing the DS was lacking, really.

To have something to show off graphically, probably Street Fighter.

For the best examples of 3d use, probably Pilotwings or Ridge Racer, though these are far from being "deep gaming experiences" if you are one of those stalwart "hardcore" types.
