If you want to get one of the earlier games, I'd recommend 3, it's the easiest for beginners.

III was the easiest?! Oh s*** haha.

But yeah, I've learned that part of the game is managing what you have against crazy hard battles repeatedly. Difficulty is inherently part of the experience, and the game wouldn't function well without it.
