Do we (NA) know what the eShop will be offering tomorrow?

I don't remember if any of this week's releases have already been announced or not. Ninja Gaiden's supposed to be tomorrow, right? Anything else that we know of?

No idea. Even if something is announced to come out with a release date, there's a possibility NoA won't put it up.

Ninja Gaiden is very definitely coming out tomorrow

for DSiWare theres Christmas Wonderland 2 and Crystal Adventure

For eshop originals theres Murder on the Titanic

There could be other games coming out too

They're only really rare with VC games most of the time. They're pretty good about giving out dates for original downloadable content.
