No stats no RPG

As far as I'm concerned a game needs 3 major things to be considered an RPG

1. Levelling system - Stats
2. Equipment - Loot
3. Customisable abilities

It's all about tailoring a character to the way YOU want to play, not the way the game wants your character to be.

Zelda is an Action/Adventure game.

Came to say this. Statistics-based character progression isn't present (excluding hearts, maybe).

RPG elements =/= RPG

Fishing Resort on Wii. You can level up your skill and fast travel. Is it an RPG? No.

San Andreas has all kinds of RPG tropes, way more than I care to name, is it an RPG? No. I don't recall anyone ever saying how they had to grind their machine gun skill up.

Neither is any Zelda game.

Mario Golf on GBC is heavy on RPG elements. Its a sports game, not an RPG.

no.

I play the role of Megaman in the video game Megaman. Does that make it a RPG?

Megaman is an stabilished character with its own story, name, behavior, etc. Link is the player. It's completely different.

But no, Zelda is no RPG.

And Bioshock. And Castlevania Lament of Innocence. And Dissidia. And Tony Hawk Pro Skater 3. And many RPGs don't allow customizable abilities, like FF IV (I hear you can in the DS version but not the original), Shadow Hearts, or Grandia 2.
