Do I NEED to play the DS castlevania games in order for the story?

They are unconnected. You may want to play the GBA title Aria of Sorrow before Dawn of Sorrow, but the DS outings are vastly seperated from each other plot wise.

Though, continuity wise, play them in reverse order of release.

Definitely play Aria of Sorrow before Dawn of Sorrow. It's a great game.

No you don't, most have seperate storylines because of different generations of vampire hunters.
