Is Big Shiny Infini 2x100, and Megaflash 3x100?

Yes, but their damage can still be reduced by bosses/enemies w/ DEf.

So any enemy with 2 defense is just going to cancel it out? You almost need the Boom Box to practically use it

Even then, Boombox only works on the first hit... really, the Big Shiny and Megflash versions of Infinijump are just... why...

Really? That's odd, because I'm pretty sure Squirt Gun is completely doubled.

In that case, then I can't actually think of any enemy to get your money's worth, because Petey once he's down is double damage so that's overkill...

Squirt Gun is also a Thing, and its damage is not halved by bosses' defensive abilities (except final Bowser, obviously)...

So only Things get full doubling from Boom Box, it sounds like.

However, I'm pretty sure I got the double damage on final Bowser... unless you mean the very last phase.
