What are the A and S rank casino prizes?

And when do you unlock them?
Also, the ingredient prizes from the casino, are they ingredients for a mega bad ass recipe?

A rank is Jumbo drops,

S rank is Tickets to watch cutscenes in the RIP room.

Rank S only opens up POST GAME.

A rank unlocks later in the story, they are jumbo stardrops, moondrops, etc. S rank unlocks after you beat the game, they are tickets to watch the game's cutscenes.

I don't know of a way to cash in chips, but you could buy the sword or a bunch of the consumables and sell them if you want cash.

I've heard the best way to 'cash in' is to buy the badge with 5000 chips and then sell it for 2500 gilders

No, u get a lot more money by buying the medals and selling them for cash. Don't buy the sword or consumables to transfer for cash, not worth your time.
