Bosses that dropped some sort of stone, like Moltaan, Bashura and the guardian o the woods? Theres another one so far but dont remember the name. If I can't summon them what's the point of those stones?

Oliver will get a spell called "Unleash" that essentially summons certain bosses ala Final Fantasy's old summoning system (they show up, do an animation, enemies take damage, then that's it). It's just a normal spell. You don't actually "summon" them as you would a typical familiar.
