Territory Capture - talk to Kassey when he is inside his house (I believe from Chapter 3 or 4 onwards you can play against Patrick)

Milk Drinking - Grant or Hugh has to be in the Inner Inn in the first room (Appears random I believe)

Grave Cleaning - wait in front of Galen's house in Chapter 2 and he should go out and walk around the bench/grave around 5:30 or 6:30 and talk to him

Milk drinking is also with Rock, but the time of day and the days you can play change from character to character. and you might not get to play everyday against the same person. Grave Cleaning is when Galen wakes up to before he walks into his house at 8am. i don't know that much on Territory Capture though :(

In Order.....

Grant, Hugh or Rock can only play the Milk Drinking Challenge and that Involves being in the Lobby in the Inner Inn at the same time as them

In the Second Chapter, Galens Wife passes away, Her grave is located in front of Galens house by Vesta's Farm. If you catch him around the Grave, Talk to him and most chances he will ask you to clean the Grave.

Not sure of the Chapter, Talk to Kassey or Patrick in their house.
