I've always done the "c" formation, but is there a better way???
You can actually do one better than that by planting your crops like this (X signifies tilled soil):

So there's three tilled squares on any given side with no tilled soil in the centre. This gives you 8 squares of soil to work off of.
The best place to plant your crops is in fertile soil (the darkest), as your crops will be plentiful and your profits will be greater. If you're unable to do this, plant your crops in the closest available area to you and use fertilizer (available to buy after shipping 10 limestone).
