If you don't know where all the coins are, just slowly make your way around the track finding each one. Once you've found them all and memorized their locations, practice getting every one of them in no more than TWO laps. I've found that devoting the third lap entirely to the actual race is the best way to ensure the win.

Actually the code is JOINTVENTURE - as for the coin challenge practice is the key. I'd use a lighter character such as Tiptup or Pipsy, as the coin in the tree-trunk detour in particular is hard to make the turning for, as are a couple of the ones in the first courtyard. Don't forget about bananas either - unless you get your coin pickups absolutely as you planned you'll need 10 bananas to have much of a chance of the win.
