After you defeat all Dojos in single player mode you'll unlock all the hidden characters in Versus and Tournament modes.

Unlock Ikosai	Unlock all the characters , select tournament mode. Hold R1, R2, L1 and L2 and press X to select the hidden character Ikosai.
