Answer

Umadakaras you catch in Starlight Canyon on the levels where you can fish. You need a carrot to catch it, but they're the only fish that will take it, so they're easy enough to find.

Don't really know about the other two fish. Most of the time I just try to cath Barons. But the FAQs should have some decent information.

Answer

An Umadakara can only be caught in Starlight canyon when it's raining with carrot bait. I believe you have better chance during day and evening times. As for the other two, I will let you know when I find out, it's been a while since I played it.
