There are specific items that can only be bought from these guilds.
Kestrel is left of Canard.
Empireo is behind Canard and the fountain thing at the tables against the wall.

statusOk in .hack GU volume one first if you come out of the dome or building where the chaos gate is then you go down the stairs you will see gaspard to his right at a booth like his is the kestrel guild shop and as for empirio I am not sure but if I find out I will let you know.
