Original RE 1 and the special Directors cut
Director's Cut has Arranged/Advanced mode. It has more and tougher monsters, the items have been re-arranged, and some of the camera views and lighting have been changed. An easier version of Arranged/Advanced mode is also available with a trick.
If you get the Dual Shock version of the Director's Cut, it changes the great original music for a more haphazard arrangement.
Director's Cut also has Training Mode. I don't know if the original has that or not.
