On a lot of the levels, there are tanks, copters, & skiffs. How do I get to use them?

statusPress the "BACK" button to get on/off vehicles. Some loading screens show the controls for each vehicle, but these go by quickly. Read the manual (if you have one) for clarification on each ride.
