Answer

Animation(attack style): Pick from one you know. If you know how to play as Nobunaga well, then choose that. It is usually based on preference but if you want to make the best, go with the one you know(or just don't make a CAW and play the actual character! xD)

Special Moves: Based on preference. Having played the series since the beginning, I usually forget that I have these moves! The most useful are: Regain Musou/Call Rain, Grab/Duplicates, and Lighting Slash/Damage All.

Self Skill: The "self skills" are all related to preference and how you play. I usually prefer the double jump one (Agility) but Resist,

Absorb, and Omniscience(a lovely addition) are all worth to have. The others seem only used in certain situations that usually NEVER happen(because you'd be juggling your opponent over and over :D).

Ability Type: Defense, Heavy, and Weak are useless if you want Musou, and are by far the most useless in my opinion. Stick with the others, Average and Attack being the best bets for a regular character.

War Ability: All depends on preference. However, Taunt is usually useless unless you want to capture an enemy officer. However, me helping you choose this is difficult seeing as how only the AI version will be using the war ability. I usually prefer Rally to increase attack, but having the AI use Speed randomly REALLY HELPS you get around to bases that need to be taken or defended.
