Unfortunately, you don't find out until later that the back of the minotaur is it's weak point. I came into this fight armed with a shotgun. But before i acutally started attacking him, being an achievement whore that I am in this game and wanting to get the achievements, I made him destroy all the walls and pillars in the area. That clears it up so you can see him and he doesn't end up sneaking up on you for a nastty hit in the back or something. After clearing the room, just unload on him with all available weaponry and ammo... except maybe the fire axe. You really don't wanna get near him.

statusThe back is vulnerable [don't ask how you're supposed to figure this out] so what you're supposed to do is wait for it to charge and miss you, then circle around and shoot it in the back with the shotgun or rifle while it's pausing for a moment. In practise, it still takes ridiculous amounts of punishment even this way, but it's at least less than it would take otherwise. Throwing grenades and detonating them just after it steps over them seems to count as a hit to its back, too.
