Yes, you can transfer skills between vocations.
If you'd transfer any character to become a sage, it should either be your healer, or your magic attacker as sages, being the Marios of magic would benefit the most from it. It gives you not only a more powerful sage, but an even stronger and more capable mage on the transfer back when needed.
Sages whilst having stronger skills, than priests or mages have got even or weaker skill effects overall - a priests zing almost guarantees revival at half health, almost the same effect as kazing for half the cost.
Mages are still very useful to have along of course as they can cast usefully protective spells like bounce, Blunt as well as having guard shattering attack magic (without the need to oomph others to face a boss resistant to physicals) and other debuffs and buffs except buff and kabuff. (Buff buffon is in a buff)
Their moves are realiable as they're really fast.
Sages have the spells and the abilities to make a priest and a mage more useful, but can't be relied on of the healing of attack criteria as much as priests or mages. They've got kabuff though, wherever that fact goes, and kazing is slightly more reliable than a priests zing in all or nothing emergancies, if sage's slow speed isn't taken into conseration which hurt's their reliability.
They're moreso backup characters who help in emergancies such as, lacking in offensive attacks or having a lack in defence or needing an extra healer so they're always handy, but in no ways overshadow everything else. They can be applied to most battles (making them more useful) but don't have ultimately cheaper/capable healing or outstanding magic attacks as well as the best buffs and debuffs. They're also less reliable to cast before an enemy due to their slow speed and can't cast a speed boost like Mages, arnamentalist or their counterparts, Theives.
Making the swap and getting stronger will eventually give you the ability to swap anytime at some point, so theres no need not to make the swap as if you needed a Mage, you could get him/her to swap back.
PS: Not all parties have every single character in the party as an attacker - Oomph double buffs offence for an/the individual who needs to attack which is more cost sauvy than the party only Gritty Ditty which overall, costs more for those cases.

All gains from skill points are applied to all classes (which is why it is highly suggested you snag the low investment agi bonuses in Focus, Aquisitiveness and Ruggedness).
It is worth getting a Sage but don't replace your Mage with it unless you run with an Armamentalist. Arma and Mage are the classes that can cast Oomph. Don't think of Sage as an offensive caster that can heal. Think of Sage as a healer that has offensive magic.

Any stat boosts you gain from class-specific skill trees carry over to all other vocations.
Sages are much better than Mages. Although they only have access to the Boom and Zam (Darkness) Family of spells, they also gain many good healing and support spells like Moreheal and Multiheal, Buff and Kabuff, and they are the only class that can learn Kazing, which is a guaranteed resurrection. In late/post-game, spells are always beaten by raw physical damage, so you're much better off having a single spellcaster who can do a little of both then try to focus on either a healer or a caster.
Also, Oomph is overrated. Gritty Ditty is cheaper, faster, and easier to set up in the long run.

You keep the skills, but not the spells. Yes the change is WELL worth it -Sages can bring people back to life in battle!
