The Sorcerer absorbs spells depending on the totals of your Intelligence and Willpower values, divided by 2. So, if you have, let's say, 80 Intelligence, and 70 Willpower, 80 + 70 = 150, divide that by 2, which gives you 75, meaning you have a 75% chance to absorb any spell. And once you max Intelligence and Willpower, you will be completely immune to spells.

Be warned, however, that the Sorcerer stops absorbing spells once your Spell Points are full, so be sure to use spells regularly to drain your points, so that you can remain safe from spells.
