I need some help, what is the best way to get rid of a large body of water?

Fill it in with sand/dirt. IF it the ocean or a lake, using buckets wont help because it'll turn what your taking out back into a spring.

Either fill it in with sand or ground or any block (Sand and Dirt are easier to remove once placed) and then remove them to find the water all gone. Or use buckets to take the water out, but yeah that might take a while if it's a large body and not a stream.
What i usually do is fill in a small 4x4 space with cobble stone or sand and usually if you in caves its probaly useful for plugging up streams.
