Chocobo mating quest?
So, I'm just beginning to do this sidequest.
I've read multiple guides saying that to begin mating, you need a Male and Female "Good" chocobo from the Gold Saucer area.
I've caught about 10 chocobos and sent them back to the stables, and the person always tells me "This is a fairly average chocobo." Is this good enough? My Chocobo Lure materia isn't that high of a level so it's really a pain in the ass to keep doing this, especially if I've already got the chocobos that are good enough.
I've read on multiple guides that "good" chocobos will be walking in the stable area, while average chocobos will just be standing there. All the ones I catch are walking around in the pen/stable area, yet the Billy guy keeps telling me "This is an average chocobo"
I've read multiple guides about this, and they always tell me when a chocobo appears with 2 spencers, that it will be a good chocobo. I've caught a few with 2 Spencers, and Billy tells me they're just average.

No, that's not the problem - a higher level Chocobo Lure will increase the odds of a chocobo encounter, but has no effect on what quality that chocobo will be.
Chocobos caught with 2 Spencers should be good, so be sure you're not mistaken and seeing other chocobos be rated as average. In any case though, good chocobos are uncommon, it's easier to just catch two great chocobos, they work the same.
Lastly, do not use the in-depth chocobo guides on this site, they're inaccurate. Best option would be the chocobo section in Absolute Steve's guide.

well to be honest your real problem is your chocobo lure materia. the higher the lvl the better the chocobo. The best place to train would be northern crater. there is an excellent breeding guide that will tell you exactly how to get a gold.

here is the best guide for the mating quest. I followed this guide exactly (as it's exactly everything the chocobo sage will tell you) http://www.gamefaqs.com/console/psx/file/197341/2383.
You may also notice that if you leave your chocobo's in the pen for too long their health will deteriorate. i found this out when i caught a wonderful chocobo moved it to the stables and chocobilly informed it was a wonderful chocobo, i died and forgot to move the chocobo back into the stables and came backa few hours later and again moved it back to the stables and chocobilly informed "i can't really recomend this one". also your chocolure DOES have some bearing on the chocobo's you catch, as you will find it almost impossible to catch a wonderful chocobo with anything lower than a lvl 4 chocolure, not to say it's impossible, but it improves your odds.

In order to find the chocobos you need to get the green and blue chocobos you need to fight with the chocobo lure materia at the tracks near Mideel. To get the wonderful chocobo you need to fight at the tracks near icicle inn then breed away. I also recommend for the green, blue, black chocobos you need to get the carob nuts from a Vladorakos (red dinosaur monster) and for the gold chocobos you need the zeio nuts from the goblins.

I just did this in he last couple of days. Get the great chocobo near Mideel, it will always be with one or two spirals. To get the good chocobo, you need to capture the one that appears with 2 flapbeats, BUT THE FLAPBEATS MUST BE IN THE BACK ROW!! 2 flapbeats in the front row get you an average chocobo. I have never found a chocobo that appeared with 2 spencers. Remember that sex is determined when you move them into the stable. If you get tow males for instance, reset and try the last one again. You can get both the blue and the green with this one pairing, if you don't mind knowing you are going to mate inbred chocobos to make the black. The catch is that I reset a ton trying to get a blue/green pair with the right sexes, but it will happen.

I have done this over and over and it sure took a long time to do.
I was able to find the following Chocobo's here:
Chocobo Ranch area: Poor/Weak
Junon area: Fair/Poor
Gold Saucer area: Good/Average
Rocket Town area: Mediocre
Wutai area: Average/Fair
Icicle Inn area: Wonderful/Weak
Mideel area: Great/Fair
To get to the gold chocobo you must do the following:
1) After feeding 90 Sylkis greens to both your yellow Great Female and your Good Male, and racing them both up to S Class, save your game. Now go into the stables and tell the boy that you want to breed them. When he asks which type of nut to use, select a Carob Nut. This will result in a Green or Blue chocobo (probably Green). If it doesn't, load your game, but it SHOULD work. Make note of this baby's gender. Feed it 90 Sylkis Greens and race it up to S Class as well.
2) After racing your new chocobo up to S Class, its parents should beable to mate again (if not, try getting into the first materia cave or going through the Ancient Forest near Cosmo Canyon if you got a Green chocobo [To take your new chocobo to another continent, go to the stables tell the boy that you want to ride him. Once on the world map go into the airship as normal; when you get off, you'll be on the chocobo. When you're finished, just ride it back into the stables. Save your game and mate the original parents, again using a Carob Nut. This time you should get the opposite color and opposite gender chocobo (if you originally got a Green Female you should now get a Blue Male, etc.). If you don't, load your game and try again, but you shouldn't have to. Feed this baby 90 Sylkis Greens and race it up to S Class.
3) When your Green and Blue chocobos are at S Class and are able to mate, couple them and use yet another Carob Nut. Make sure to save your game first, and load it if you don't get a Black Female. If you do, feed it 90 Sylkis Greens and race it up to S Class (sound familiar?). Also do this with the Wonderful Male chocobo that you caught. It is impossible to get a gold chocobo without racing your Wonderful Male up to S Class!
4) Mate your black chocobo with the Wonderful Male using the Zeio nut to get a Gold chocobo. Once again, save beforehand and load it if you fail, but you should be okay. Congratulaions! You're now the proud owner of a Gold chocobo!
But an ez way to get a gold chocobo is to:
Beat Ruby Weapon and Take Desert Rose to the old man in Kalm. (But do it if u dare)

First off, ditch all the chocobos that aren't good enough and start fresh.
Second, you should have two Chocobo Lure materia. The first you buy on Disc 1 to get through the swamp. The second is on Disc 2 when you go back to the farm, it's near the fence at the lower right corner of the screen. I've always found chocobo encounters to be fairly regular when both are equipped, and if one is at the second level. Chocobo Lure only determines the rate of chocobo encounters, it has no effect on which chocobos show up.
Chocobo catching areas:
Mideel: Great chocobos are encountered with Spirals, and only Spirals. Supposedly, you can just get started by capturing 2 chocobos here, and you don't really need to worry about the whole good/great stuff, but I always do it good/great because it's always worked for me.
Gold Saucer: Good chocobos are encountered with Spencers. The encounter has a fairly low rate of occuring, but it DOES occur. Check T. Fergusson's Enemy Mechanics FAQ for the details if you're curious.
Icicle Area: The wonderful chocobo is only encountered with Jumpings. You can skip this step initially, since you won't need it until you have the Black Chocobo.
Remember that sex isn't determined until you move them into the stable, so just soft reset if you don't get what you need.
You don't actually need to race the good and great yellow chocobos to get a blue or green chocobo. It makes it a bit easier, but it's unnecessary; it'll also save some gil instead of spending it on greens. It's entirely possible to get a blue or green chocobo before Cloud rejoins the party. When racing chocobos, getting to Class A is sufficient, you don't need to bother with getting to Class S if the chocobos aren't fast enough. Make sure the blue and green chocobos are different sexes so you can quickly breed them for the black chocobo.
Once you have the black chocobo, get the wonderful chocobo. Don't forget the Zeio nut, either. Breed them and you should have a gold chocobo. The sex of the black and wonderful chocobos really doesn't matter, I prefer a black female chocobo because female chocobos seem to make better racers.

No - average Chocobos are not "Good" enough, neither are "fairly good" Chocobos considered "Good". If you want to make your work harder, you can feed, race, and breed normal yellow Chocobos until they produce better offspring; but this costs more money and work than just going out and getting the right candidates in the first place.
You'll do even better with 2 "Great" Chocobos - these can be found in the tracks near the forest surrounding Mideel. Great chocobos are easy to get there, but the hard part will be having one be Male and one be Female - you'll probably get a lot of Great Females in a row before you finally get a Great Male.
Also, *potential spoiler here* you won't be able to do Chocobo Races until Cloud is back in your group, as the Golden Saucer will be closed due to Dio being an idiot and not being sure if the end of the world is the right time to keep it open or not.
Not having Chocobo Races means not being able to get your chocobos really awesome - this means your chances of producing the awesome chocobos will be reduced greatly.
Also, and this is harder to pull off, you CAN make Green and Blue chocobos from 1 Great and 1 Wonderful Chocobo. I've done it. Most of the time it'll give you a standard yellow Chocobo, but it can be done, which could save you a little time since you'll already have your Wonderful Chocobo to help you make the Gold one later.
