Bait management for Guardian fish?

Is there any way for me to skip over the easier-to-catch fish without losing bait until I feel the Guardian nibbling on it?

I'm trying to catch the Guardian for the Hermit quest and the fish I've caught so far are the ones that are easier to catch. I'd very much like to conserve bait and use it to catch only Guardians and Huge Fish, if possible.

You can pull early without fear of losing bait (just hit the Circle button). I do believe the old man told you about this when you accepted the quest, but it's not so obvious.
