Substitution jutsus?

After passing certain events (such as beginning to use jaraiya) a message appears about adding a substitution justu. Something about unlocking tsunade, orochimaru and jiraiya, then the message appears. So what is it? What does it do? and how do you use it?

Pressing L1 while choosing your character during Character selection changes the type of your substitutions. For example: Itachi normally has Crows as his sub, however if you were to change it to "Ichiraku ramen set" then when you use a substituion, ramen items appear in place of his crows
