The Nintendo website says games don't stay on the Wii after the transfer. Does that include save data or are they just referring to games that were bought in the shop? They don't say anything about game save data specifically.

Save data does /not/ remain on the Wii after a transfer. You can copy some things to an SD card to continue using on the Wii, but some things will be gone to the Wii U for good. For example, Super Smash Bros save data can't copy, so once you move it to the WIi U, say goodbye to playing with Gamecube controllers.
