For some reason, Peach users can always read what I'm going to do next and SpamFly... unless I use R.O.B. for some reason. Is there some way of beating Peaches like this WITHOUT using the Robot...?

I main Toon Link... but differentiate with Dedede, Luigi, Sonic, ROB, Snake, Kirby, and Ice Climbers... '3'

Toon Link: Fairly unpredictable, use his quickest moves and alternate between them.
Dedede: Tends to be predictable. Only use his quickest moves, since a good player can see most of his moves coming from a mile.
Luigi: Fairly unpredictable. Try to use his fast moves and mix things up.
Sonic: Most of his moves are fast and therefore less predictable. Exploit this. Keep mixing it up, though.
ROB: You say that you don't have problems here, so good to go.
Snake: Try to keep her away with your various explosive devices. If she gets in close, then use your fast moves and try to distance yourself again.
Kirby: Kirby has some nice, fast moves. Use them, not his slower moves such as his hammer.
Ice Climbers: You could always chain grab with the Ice Climbers. Keep in mind that their moves tend to be predictable, though some of them are fast.

This all comes down to your own skill you have to be less predictable like with Rob they wouldnt know when you would shoot your laser or do his down B.

You're obviously being predictable.
Try a different strategy and change it up mid battle.
There's no real way to beat peach that you won't use against other characters.
In general: GET BETTER AT THE GAME

Hmm... ultimate peaches?????
Never seen such a thing. Seriously, more trouble with Peach then with somebody like Metaknight? Odd...
Anyway, you have to mix it up. Try using your characters fastest moves or any of your moves that may look like other moves. Wario, for example, is hard to predict simply because almost all of his moves look alike. Someone fast, like Metaknight, can also be hard to predict due to raw speed. However, someone like Gannondorf may be much easier to predict due to their lack of speed and obvious moves.

a lot of people are right, stop being predictable. dont use the same move over and over again!
But if you want to beat peaches with your own style do this:
1. Dont face peach in the air, her air moves are pretty good.
2. Use a big and heavy character that can knock peach in the sky. If its a big stage avoid using bowser though-hes slow!
3. when low on health dont go into the air. I know, i've repeated myself, but peach's ground game has very little knockback moves, and that umbrella could launch you!
