You can win stars by just driving generally good. You do not need to win every race, you don't even need to win the Grand Prix to star something. Falling off the course will hurt your chances considerably.

50cc is the easiest cc to star, 100cc is in-between, and 150cc and Mirror Mode is the hardest. For even more information, read the sticky on the boards.

You need to complete the races in good time, try your best to stay on the track and not hit any walls.

If you're going for three stars, it's important to use as little items as possible.

Getting Star rankings are very simple, but very difficuit unless if you got lots of pratices over all the courses, and willing to be able to deal with potenial hazards along the way. Here's all my tips on to get star ranks by others of how I was able to get it.

1. Get first and complete the race as fast as possible! The longer you hold first and finishing the races as fast as possible, the better your chances are getting a high rank.
2. Get a boost start everytime, however even if you mess up is okay because... (Check #1)
3. Mess up your opponents! This isn't always necessary, but messing up your opponents can actually net you some pretty good chances of getting a higher star rank.
4. DO NOT go off-road UNLESS you got a boost of a trick, mushroom, or star.
5. DO NOT get hit! Even with the walls of the course.
6. DO NOT fall, but you can fall as nearly many times as you want if you follow Rule #1, but it'll be just as difficuit as you want be able to finish the races in a very good times.

That's really all I have on these tips about getting star ranks, but trying for higher rankings mean that the rules get a LOT more sricter.

Important note: I noticed that everyone here miss it, but in order for your star rank to show, you have to have at least a star (or 2 or 3 it doesn't matter) in EVERY single Grand Prix under EVERY single level including mirror.

Get in first. Get a large lead, like half a lap. Stay there for the rest of the race. Star ranks are now yours. I've fallen off the track and still managed to get a triple star. Getting far ahead of the pack is vital.

Trying to get a 1-Star Rank allows for some leeway, but not too much. To earn a 1-Star Rank, you'll still have to play well.

-You are allowed to bang into walls (1 or 2 times)
-You are allowed to bang into obstacles (1 or 2 times)
-Stay on road as much as you can (Off-roading is allowed 2 to 3 times without a boost)
-Try not to fall off the track (Once is allowed, twice almost guarantees a non-Star Rank)
-Do as many tricks/tactics as you can. Drift Boost, Snaking, Wheelie, etc. (This is a rumor, but it may help)
-Stay in first for a good amount of the race
-Try not use items to catch up to other players (once is allowed. Ties into the above reason)
-Finish as fast as possible
-You must get 53 points or more (47 according to Milon) as your grand total

IVb. Guidelines for getting a 2-Star Rank:

Trying to get a 2-Star Rank is obviously harder than trying to get a 1-Star Rank. It allows for little leeway.

-Try not to bang into walls
-Try not to bang into obstacles
-Stay on the road as much as you can (Off-roading is allowed 1 to 2 times without a boost)
-Try not to fall off the track (maybe once, but it almost guarantees you a 1-Star Rank)
-Do as many tricks/tactics as you can. Drift Boost, Snaking, Wheelie, etc. (This is a rumor, but it may help)
-Try to stay in first for most of the race
-Try not to use items to catch up to other players
-Finish as fast as possible
-You must get 55 points or more (53 according to Milon) as your grand total

IVc. Guidelines for getting a 3-Star Rank:

Trying to get a 3-Star Rank is no doubt harder than getting one of the two previous Star Ranks. It allows for almost no leeway.

-Try not to bang into walls
-Try not to bang into obstacles
-Stay on the road (unless you have a boost item to allow you to travel off-road)
-Try not to fall off the track
-Do as many tricks/tactics as you can. Drift Boost, Snaking, Wheelie, etc. (This is a rumor, but it may help)
-Stay in first for much of the time in races
-Try not to use items to catch up to other players
-Finish as fast as possible
-You must get 60 points as your grand total

Well, many people on this board probably already know what they are, but star ranks are a grade on how well you've done in the Grand Prix. Instead of the A, B, C, D, E ranks, you'll get a special ranking if you've done an EXCELLENT job. If you manage to get past the normal ranks, your ranking will either be one star (Great), two stars (Awesome), or three stars (Fantastic).
You can receive a star rank by racing in the Grand Prix, on any CC (50, 100, 150, or Mirror Mode). Make sure that you know that what you do in all 4 races in one cup counts towards getting a Star Rank. Pretend that the four races equal one huge race.
IIIa. Unlocking Characters

To get certain characters, you will need to get a 1-Star Rank or better in certain cups.

IIIb. Showing Them Off

If you get a 1-star rank in every cup in the Grand Prix, one star will be on your name when you play online (and possibly your driver's license). The same thing applies for 2 and 3-star ranks also. But if you have a 1-star rank, in a single cup, and all the other cups are 3-star ranks, then your online name (and possibly license) will only show one star.

Take into account that the following scenarios may affect your ranking.

-Getting hammered on with many items in a small amount of time(Blue Shells mostly)
This allows leeway for how fast you finish and your finishing place. It also allows you to use items more to catch up.

-If you fall of the track once, but followed the guidelines strictly, then you can probably still achieve a good star rank.

Here's a general tip to remember when looking to get a star rank:

Make sure that you know that what you do in all 4 races in one cup counts towards getting a Star Rank. Pretend that the four races are one huge race.

3 simple rules:

1. Do not hit any obstacles. This includes walls, in-map objects, and stationary items.
2. Stay in 1st as long as possible. The game factors in % being in 1st.

I found a guide on another forum that, when followed, got me a three-star rank in every cup on every class. The basic points are as follows:

50cc - Master the courses at hand, not the racers. Hitting environmental hazards (goombas, chomps, etc.), falling into pits/deep water/lava/quicksand, and driving offroad for too long directly influence the hidden points earned.

100cc, 150cc, and Mirror - Now the racers are your primary concern. You must stay in first place for a certain percentage of the races and have 60 points on the scoreboard at the end of the Grand Prix. Screwing up on the track doesn't matter as long as doing so doesn't cause someone to pass you (though too much time offroad can still cost you a star or two regardless of your placement). The required percentage is cumulative. So, being left in another kart's dust for half of one race won't necessarily ruin your chances of getting three stars at the end.
