Fighting Barroth is the better method by far. It will sometimes drop a shiny from mud being shoved of it (usually the legs). Wounding the arms (yellow parts visible), chopping the tail and chopping the scalp will increase the reward numbers and hence the chances of Fertile Mud appearing. The key is to keep at it.

For SnS on Barroth, use a Royal Ludroth weapon. To get Fertile Mud, focus on attacking areas where he's still covered in mud, then when it comes off pick up the shiny drop on the gound and you might get some, also you can get mud from the quest rewards.

And one last thing, Barroth is weak to water where he's covered in mud and weak in fire where he's clean.
