The current version of Minecraft on the Xbox 360 is Beta 1.6. You do not even have stuff from Beta 1.7.3. Endermen were introduced in Beta 1.8 and went on until 1.2.5 full release. So no you not have Endermen or the Enderdragon or even The End on your current version. If you want Endermen than you need to play on a PC or wait until they release an update for 360.
