I'm having trouble seeing differences between some of the ammo types. It seems like there is a considerable amount of overlap, plus some ammo types supposedly work well against two types. Can someone go over the types of ammo and what they're good against (i.e., shields only, armor only, both armor and health, etc.)?

Personally i love the warp ammo, it is good against almost everything and the top level (heavy) Does about 45+% damage onto your gun damage

Incendiary - is great a taking down armor quickly, note I did not say shields. Incendiary ammo should be used against anything that has a yellow health bar as this represents armor. This ammo also causes damage over time as many enemies will be set on fire. Setting a krogan or vorcha on fire will cancel out their natural ability to heal damage.
Disruptor - the polar opposite of incendiary, it takes down shields and biotech barriers relatively quickly, but offers no benefits when blasting away at armor. It doesn't appear to have any other benefits then that, but I'll admit I never really used it.
Cryo - Freezes your enemies once they are low on health, at higher ranks, it has a better probability of freezing them even if they have more health left. Frozen enemies take more damage, and can be shattered with biotechs or weapon damage. Though as far as I could tell, once an enemy was frozen it was considered dead anyways.
AP - This is garrus' specialty ammo you get after completing his side mission. Just as the name implies it's great against heavily armored enemies such as mechs and krogans. Better at penetrating armor then the incendiary ammo, however it does not come with a damage over time feature. You also have to tell garrus to use this as he will not on his own.
Warp - Jacks' specialty ammo, I never took the time to put any points in this, nor did I ever really use jack so I can't give you a good explanation sorry.
The only part that's incorrect is the Cryo Ammo. If you leave them alive for the few seconds it freezes them (3 seconds at level 1) they thaw and will get up and attack again. Frozen enemies take extra damage, so if you manage to freeze them at high health, frag them quickly. "One down!"
Also, addition for Disruptor. It's REALLY good against synthetics. So Geth and Loki mechs and stuff. Not so good against Husks.
Warp - Jacks' specialty ammo it does damage to all. Health, Shields and Armor
You forgot the shreder ammo it dose increaced damage on organics
slight addition to disruptor ammo. It also does more damage to synthetics and mechs. It will make there weapons overload and cause mechs to explode at higher levels.
go with the warp ammo, its great for just about any enemys, and the classes who dont start with an ammo type can add it to there advance training slot PERFIK
