How do I actually access the grinder levels ?

Im obviously a bit thick but how do i get to the grinder levels and the practice stuff the only levels i have access to are the story and borderlands. Ive completed the story and have done two of the borderlands maps but cant find any other versions what am i missing

In story mode once you have completed a chapter there should be difference modes for that level, one of these modes is grinder. Pick a level and get ready for some grind!

Only some levels have the grinder mode, and even fewer have the super grinder. you use left and right to select the level in the menu right?
well you use up and down to select the gametype. good luck grinding.
