Who or what exactly petrified the evil forest? Was it just killing the plant that triggered it? Always wondered. Thanks for any replies.

They never explain it. We're left to assume that killing the plant brain triggered the petrifaction.

This is what I think happened, when you kill that boss, the forest can no longer sustain itself therefore it starts to petrify itself rapidly. I think the forest was only able to survive with the plant boss. I could be wrong but that's the best thing I can think of.
IX > VI > VII > IV > VIII > V > X > XII > I > III > II > 50 miles down filled with human waste then XIII

My take was that just before the Plant Brain died, it triggered something in the roots of the forest (I guess?) intentionally. As retaliation for being defeated, nothing was to escape alive.

Not really. Plant Brain was pretty much just a load-bearing boss...not by traditional definition but still, same basic rule.
